Ingredients (serves 4):

Meat stock (broth would be ideal to TRUE, but it's good enough broth nut)

Oil (extra virgin olive oil of course)

Parmesan and pecorino qb

Pasta 350 gr

Potatoes 300 gr

Ham 300 g diced

Salvia some leaves

shallot or white onion

½ cup white wine

Salt and pepper to taste
Council for dice: buy one without glutamate.
Peel and wash the potatoes and cut into small cubes.
Wash and cut the shallot (Or onion) and let it brown in a large pot.
Add the ham and saute all the wine by adding a few moments, then add potatoes, cover with broth.
Cook a few minutes so the potatoes begin to soften and then add the sage and pasta.
Now you must proceed as if you were making a risotto, or adding the broth a little at a time as it is absorbed.
After cooking stir everything with Parmesan, pecorino cheese, a drizzle of olive oil and pepper.
