not know about you, but even if it's been a month since Christmas, we are under testing now and unfortunately for me, and I think (I hope - unity is strength!) That for you it means to be filled with snacks from vending machines, simply because it is the only thing that gives my new home: the library!
Tonight I came home after a long study session and, unlike when I was a child (to reconnect to comment the previous post), I felt like vegetables, something light and so I made a soup.
I do not like this soup, but I must say that I followed the recipe this time that I found in a book is really good!
Serves 4:
4 tomatoes
2 carrots, diced 2
small zucchini, diced
2 cloves garlic, crushed 250g
tomato puree
600ml of broth
600g beans
salt and pepper Parmesan
(not having tomatoes and beans at home, I added a stalk of celery )
1. Boil water and mingle for a few seconds and then the tomatoes, then peel, remove seeds and cut into cubes.
2. In a skillet deep enough to heat the oil with the onions until they are transparent. Then add the zucchini, carrots and garlic and cook for 2-3 minutes.
3. Pour the past and let go low heat until it withdraws a bit 'the sauce, then add the broth.
4. Boil, stirring, pour the tomatoes. Cook for 10 minutes.
5. Then pour in the drained beans and continue cooking for another few minutes.
6. Season with salt and pepper, sprinkle with Parmesan cheese and serve!
Unfortunately I forgot to take a picture to my plate (I was too fameee!) Then carry the book.
